I have two recipes which use baking powder and baking soda, and these
would not normally be made in a bread maker, if memory serves, but I
remember buying this bread in lots of stores around here and it always
seems more like a yeasted bread with lots of fruit in it than a quick
bread with a ton of sugar icing.

Has anyone made it in a bread maker using yeast? IF so, please let me
know the recipe or formula that was used.

For those of us not familiar with chop suey bread, could you describe
it? From the name, I'd have supposed celery and soy sauce, not fruit and
icing ;-)

Apparently this is a quick bread - it's a sort of quickie version of
the dreaded fruitcake. If the OP has a bread machine that has a quick
bread cycle, it could be done in the machine, but I wouldn't. I
googled and found this:

CHOP SUEY BREAD

1 Tbsp. butter
1 egg
2 c. flour
1/2 tsp. salt
1/2 c. chopped nuts
1 c. sugar
1 c. milk
2 tsp. baking powder
1 tsp. vanilla
1/2 lb. dried fruit

Mix and let rise 20 minutes. Bake in at about 350 degrees for 1
hour until done in loaf pan.

Found by googling - haven't done it myself. K.

Chop Suey Loaf

1.5 Pound (750g)

3/4 C Water
1 Egg
¼ C Skim Milk Powder
1 & ¼ tsp Salt
2 Tbsp Granulated white sugar
2 Tbsp Butter
2& 1/3 C All purpose OR Bread flour
1 & ¼ tsp Bread Machine Yeast
1 C Candied Fruit
¼ C Raisins

2 Pound (1kg)

1 C Water
2 Eggs
¼ C Skim Milk Powder
1 & 1/2 tsp Salt
2 Tbsp Granulated white sugar
2 Tbsp Butter
3 & 1/2 C All purpose OR Bread flour
1 & ¼ tsp Bread Machine Yeast
1 & 1/2 C Candied Fruit
1/2 C Raisins
Measure all liquids into pan. Top with all dry ingredients in the
order recommended by the manufacturer EXCEPT fruit and raisins.

Select Sweet Cycle.

Add raisins and fruit at the “add ingredient” signal.
