Post by David WoodI have a Panasonic SD206 bread maker and about 25% of the time the wholemeal
loaves don't rise enough, but it's never really light.
Can anyone suggest a way of getting the loaf to rise more. I phoned
Panasonic who blamed the flour I use-not much help there!
I follow their recipe:-
500g wholemeal flour
1œ tablespoons sugar
2 tablespoons milk powder
1œ teaspoon salt
1 sachet yeast
360ml water
25g butter
Πteaspoon Vitamin C powder
I set the machine to Fast Bake - 3 hours
I just got thru posting this, so I'll send it to you as well as it might
answer your question, too.
This is from someone who has NO failures in her bread machine -- me! I have
my favorite breadmaker recipes written down and their variations. They have
all been trial and error, so now I don't worry.
Since you are having trouble with your whole wheat recipe, I have used this
receipe in 3 bread machines and they all have made risen/good bread. No
problems.
100% WHOLE WHEAT BREAD / NO OIL "Whole Wheat" Setting
13 oz. water
1-3/4 teaspoons salt
4 Tablespoons of Honey or Molasses
4 cups whole wheat flour
1 Tablespoon of Hodgsons Wheat Gluten
2 teaspoons fermi instant yeast
Put your ingredients in the order I have written it. Turn it on -- that's
it.
I would listen to what others have said about how your bread should look as
it's BEING mixed. I always stay around until it gets thru mixing. This
bread should look sticky, but you should get it into a ball. I take a soft
spatula and scrape the sides down or at the bottom around the paddle.
Here is something you might keep in mind for this and other heavy breads in
the breadmaker. If you don't think it's kneaded enough, just unplug it,
reset it and let it begin all over again.
This is a lovely tasting bread made more lovely by the various "sugars" you
add; i.e., types of honey, types of molasses. I have added date molasses
and carob molasses and they all have distinct tastes.
If this bread works out well for you, try grinding some whole wheat for this
bread. It makes it even better tasting. Yum, Yum.
Hope this helps.
