I am looking for a recipe for Scala bread. It is a white, Italian style
loaf. My husband used to get it in a local bakery in Portland, Maine, but we
have moved away and nothing here is close to it, or so he says. He still has
an occasional longing for it. Any help? Could it just be a traditional
semolina bread that the Northeasterners have locally named Scala bread? Any
information and recipes would be greatly appreciated!

Is it "scala" or "scali"? When I lived in New England the most popular
Italian bread was called "scali". A recipe for scali can be found here:
